You guys should be able to pull it off. If Master of Orion could be made decades ago with so crude and difficult programming then today, with all the tools available you should do as great job or much better. There is actually huge difference in visual quality of textures when using DirectX9 and 10/11.
Visuals are important and I would say it needs to be at least DirectX 10..

Take your time to develop the game. Although it must be stressful keep in mind that persistence pays off.
Everybody who pledged has been waiting a long time already so a bit longer is ok too. Just don't quit... ;)

If you ever tried diving, then it's just the same thing; you are weightless and does not matter where is up or down. You just get your bearings by checking the special pointers. In space it is stars and galaxies. Then you always know where you are.

It would be hard to create a ship with mobile shipyard capability. Even at this point, it's just an upgrade option to a ship to have 'shipyard' capability, expensive, slow but mobile.
